Description
A comforting Guinness Beef Stew that brings family together with deep flavors from slow-cooked beef and hearty vegetables.
Ingredients
- 2 pounds beef chuck roast, cut into cubes
- 1 can (14.9 oz) Guinness stout
- 4 medium potatoes, diced
- 3 carrots, sliced
- Salt and pepper, to taste
- 2 tablespoons neutral oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef stock
- 3 sprigs thyme
- 2 bay leaves
Instructions
- Season the beef cubes with salt and pepper.
- Heat a heavy-bottomed pot or Dutch oven with oil and brown the beef in batches.
- Once browned, remove beef and sweat onions, garlic, and aromatics until softened.
- Deglaze the pot with Guinness.
- Return the beef to the pot, add potatoes and carrots, and pour in enough beef stock and Guinness to cover the meat.
- Bring to a gentle simmer, skim excess fat, and cover.
- Cook on low heat for about 120 minutes or until the beef is fork-tender.
- Add fresh herbs just before serving.
Notes
For a thicker stew, whisk in a beurre manié or reduce the liquid slightly towards the end of cooking. Store leftovers in airtight containers for up to four days.
