- 2 tablespoons poppyseeds
- 2 teaspoons lemon extract
- 1 cup sour cream
- 2 teaspoons baking powder

Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a large bowl, mix together the dry ingredients: flour, poppyseeds, baking powder, and sugar.
- In a separate bowl, combine the wet ingredients: sour cream, lemon extract, eggs, and melted butter.
- Gradually pour the wet mixture into the dry ingredients, gently folding until just combined.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full.
- Bake in the preheated oven for 18-22 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool slightly in the pan before transferring them to a wire rack.
- For a finishing touch, dip the tops in lemon glaze once completely cooled.
