Description

A cozy and comforting Mushroom Risotto infused with earthy umami flavors, perfect for family dinners or gatherings.


Ingredients

  • 1 cup Arborio rice
  • 8 oz mushrooms (cremini, shiitake, or oyster)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup white wine
  • 4 cups broth (vegetable or chicken)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter


Instructions

  1. Sauté chopped onion and minced garlic in olive oil until translucent.
  2. Add sliced mushrooms and cook until softened.
  3. Stir in Arborio rice and cook for 1-2 minutes.
  4. Pour in white wine and let it absorb.
  5. Gradually add broth, one ladle at a time, stirring continuously until absorbed.
  6. Once rice is al dente, remove from heat and stir in Parmesan cheese and butter.
  7. Serve warm.

Notes

Feel free to personalize the dish with herbs, lemon zest, or different mushrooms to suit your taste. Leftovers are perfect for making arancini.
