Ingredients
- 1 cup Arborio rice
- 8 oz mushrooms (cremini, shiitake, or oyster)
- 1/2 cup grated Parmesan cheese
- 1/2 cup white wine
- 4 cups broth (vegetable or chicken)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp butter
Instructions
- Sauté chopped onion and minced garlic in olive oil until translucent.
- Add sliced mushrooms and cook until softened.
- Stir in Arborio rice and cook for 1-2 minutes.
- Pour in white wine and let it absorb.
- Gradually add broth, one ladle at a time, stirring continuously until absorbed.
- Once rice is al dente, remove from heat and stir in Parmesan cheese and butter.
- Serve warm.
Notes
Feel free to personalize the dish with herbs, lemon zest, or different mushrooms to suit your taste. Leftovers are perfect for making arancini.
